Sweet potatoes (pronounced “puh-tay-tuhs” around these parts) are chock full of nutrients like Vitamins A and C, low in carbohydrates, and rich in fiber. (You know how we care about health around here.) Whether they’re sliced and candied or prepared and dished the casserole way, sweet potatoes are the perfect complement to your family’s holiday ham or turkey. Thanks to North Carolina farmers, this year’s holiday feast will be complete.
Despite the rainfall that Hurricane Matthew brought in October (which isn’t great for an abundant sweet potato harvest), the state’s sweet potato crop held up well and agriculturalists say the holiday demand will be strong. Some in the industry even predict a slightly higher yield than last year. North Carolina shipped roughly 16.48 million 40-pound cartons of sweet potatoes in 2015 according to the USDA. (Wowzer.)
So, as you spoon some of those oompa-loompa shaded spuds onto your plate, remember where they came from - our state’s backyard.
As you dig into your holiday meal, remember that many North Carolinians are not enjoying the same bounty.
